WILDFLOWERS INN BED & BREAKFAST - Melt-in-your-Mouth Snowball Cookies
     
Melt-in-your-Mouth Snowball Cookies from the Wildflowers Inn Bed & Breakfast in North Conway NHIngredients: (makes about 12 dozen)
2 cups margarine/butter softened
1 cup granulated sugar
5 cups flour
2 teaspoons vanilla
2 cups pecans, chopped
1/4 teaspoon salt
Confectioners sugar

Directions:
Preheat oven to 325 degrees.

In mixing bowl, cream butter, sugar until smooth. Add flour, vanilla, pecans and salt. Mix well, dough will be crumbly. Form dough into 1 inch balls and place on ungreased cookie sheets. Bake for 17-20 minutes, until lightly browned. Cool slightly, roll into confectioners sugar.
