Best Ever Crab Cakes

      THE BEST CRAB CAKES EVER

Crab Cake Ingredients:
1/4 pound red onion - finely chopped
1/4 pound red pepper - finely chopped
2 ounces shallots - finely chopped
1 pound shredded crabmeat
2 1/4 cup panko breadcrumbs
1 cup mayonnaise
1/2 teaspoon salt or to taste
1/2 teaspoon pepper or to taste
           
     
Aioli Ingredients:
1 cup mayonnaise
2-3 teaspoons fresh lemon juice
2 tablespoons white wine
2 cloves garlic
4 teaspoons fresh parsley, finely chopped
salt and pepper to taste
   
         
         
         
         
         
               
     
Directions:
To make aioli - Chop garlic in food processor. Add remaining ingredients and process until smooth.
Store in refrigerator until ready to use.
To make crab cakes - Mix all ingredients in a large bowl - incorporate thoroughly. Form into small cakes - size is up to you, but should be no more than 3/4 inch thick. Sauté in a frying pan with olive oil until each side is golden brown.

Serve topped with aioli.
