BARTLETT
INN - Greek Quiche - Yazoo!

- Ingredients:
- 3 eggs
1 1/2 cups half and half
1/4 large onion, chopped
1 teaspoon chopped garlic
1 pint cherry tomatoes or 1 large tomato chopped
6 ounces fresh baby leaf spinach
1/4 pound fresh feta cheese
1 9-inch pie shell
Pinch of salt, pepper and dried oregano
Directions:
- In mixing bowl whisk eggs, half and half, onions, garlic, salt, pepper, oregano.
Layer the pie shell with spinach at bottom, then tomatoes, then crumbled feta.
Pour egg mixture into pie shell and add the
Secret Ingredient - 2 oz. of cream cheese - break into small pieces and distribute evenly around the quiche...so smooth!
Line baking sheet with tin foil and bake for 45 minutes at 350 or until browned.
